Idli is a popular South Indian breakfast recipe which needs no introduction. Today, am going to share a yummy snack recipe with leftover idlis. Chilli idli recipe is an unique take on the traditional Idli. Chili idli replaces the traditional condiments served along with bland idlis to make the idlis spicy and tangy.

Steamed idlis take on a new look thanks to the Indo-Chinese fusion in this chilli idli dish. Indo-Chinese fusion cuisine is something that always drives people insane and increases their appetites. It’s very astonishing how leftover idlis may be transformed into a delectable street food snack. After making it, kids will undoubtedly enjoy it. Idlis that are leftover are simply no longer a waste. Once you’ve tried it, you’ll want to create additional (steam) idlis so you may have these as an evening snack. The idlis are perfectly fried and crisp; if they are soggy, the flavour of the dish would be lost.

If you have capsicums in colours other than green, such as red and yellow, use those instead. If you’re serving it with chapatti, you may either serve it as a side dish or just as a snack. 1. Ingredients needed to make Chilli Idli
When preparing Chilli Idli, one will need a variety of ingredients, including two cups of Idli batter, two tablespoons of oil, two tablespoons of mustard seeds, two tablespoons of cumin seeds, one tablespoon of urad dal, four green chillies, one teaspoon of grated ginger, one teaspoon of chopped curry leaves, one teaspoon of turmeric powder, one tablespoon of chilli powder, four tablespoons of grated coconut, one teaspoon of sugar, and salt to taste.

2. Instructions for preparing the batter for Chilli Idli
To begin preparing the batter for Chilli Idli, warm two tablespoons of oil in a pan and add two tablespoons of mustard seeds, two tablespoons of cumin seeds, and one tablespoon of urad dal to the pan. Once the mustard seeds start to splutter, add the green chillies, grated ginger, chopped curry leaves, turmeric powder, and chilli powder to the pan. Fry the ingredients for a few minutes, stirring to ensure that the powder does not stick to the pan. Next, add the two cups of Idli batter and stir everything together. Finally, season the batter with sugar and salt to taste.

3. Instructions for steaming the Chilli Idli
Once the batter is prepared, it is time to steam the Chilli Idli. Grease an Idli steamer with oil or ghee and pour the prepared batter into each of the moulds. Put the steamer on the stove and steam the Idlis for 10-15 minutes or until they are cooked through. Once the Idlis are cooked, remove them from the steamer and allow them to cool down.

4. Instructions for preparing the Chilli Idli masala
To prepare the Chilli Idli masala, heat two tablespoons of oil in a pan. Once the mustard seeds start to splutter, add four green chillies, one teaspoon of grated ginger, one teaspoon of chopped curry leaves, one teaspoon of turmeric powder, and one tablespoon of chilli powder to the pan. Finally, add four tablespoons of grated coconut and mix everything together.

5. Instructions for assembling the Chilli Idli
Once the Idlis are steamed and the masala is prepared, it is time to assemble the Chilli Idli. Place the steamed Idlis on a plate and spread the prepared masala evenly over each Idli. Finally, garnish with some grated coconut and chopped coriander leaves.

6. Tips for serving the Chilli Idli
Chilli Idli can be served hot or cold, depending on one’s preference. To serve the Idlis hot, simply add a dollop of ghee or butter on each Idli. This adds an extra flavour and makes the Idlis more delicious. If serving the Idlis cold, they can be served with coconut chutney or any other type of chutney of one’s choice.

Ingredients

  • 2 cups idli cubes
  • 2 tsp red chilli sauce
  • 3 1/2 tbsp tbsp oil
  • 2 tsp ginger (adrak) finely chopped
  • 2 tsp garlic (lehsun) finely chopped
  • 2 tsp green chillies finely chopped
  • 1/2 cup onion cubes
  • 1/2 cup capsicum cubes
  • 2 tbsp tomato ketchup
  • 1/2 tsp sugar
  • 1 tsp vinegar
  • 1 tsp soy sauce
  • salt to taste
  • 2 tbsp spring onions finely chopped (whites and greens)

For Garnish

  • 1 tbsp spring onions finely chopped (whites and greens)

Instructions

  1. Heat 2 tbsp of oil in a broad non-stick pan, add the idli and sauté on a medium flame for 3 to 4 minutes or till it turns light brown in colour. Keep aside.

  2. Heat the remaining 1½ tbsp oil in a broad non-stick pan, add the ginger, garlic and green chillies and sauté on a medium flame for a few seconds.

  3. Add the onions and sauté on a medium flame for 1 minute.

  4. Add the capsicum and sauté on a medium flame for 1 more minute.

  5. Add the tomato ketchup, sugar, vinegar, soya sauce, red chilli sauce and salt mix well and cook on a medium flame for 1 minute, while stirring continuously.

  6. Add the sautéed idlis and spring onions, mix gently and cook on a medium flame for 1 to 2 minutes, while tossing occasionally.

  7. Serve immediately garnished with spring onions.
